Dark Chocolate Rosemary Energy Balls

Let’s face it – the lifestyle portion of the whole “LifestyleButter” thing is lacking just a touch. And here’s the truth – I am no whiz in the kitchen. Between my career (Im the Operations Manager for a crazy busy marketing agency), my extra-money, fun job (I still serve twice a week at the same bar I worked at in university), my side hustle (this little LifestyleButter baby), getting to the gym 5-6 times per week, time with friends, time with family, taking care of my dog, ECT, cooking tends to fall low on my priority list.

What is high on my priority list, however, is quick, easy and nutritious snacks and meals that I can eat on the go. Which is why I have pretty much christened myself the queen of energy balls, since I make a new batch every Sunday night while food prepping. The idea for these came from my favorite cookie, made at one of my favorite coffee shops – Alforno – in Calgary. The cookie is double chocolate rosemary and they are BOMB… but probably not the best thing to be eating on the daily, so I played around to come up with a healthy alternative, in energy ball form.

They were also bomb, so I feel like it’s only fair to share. 🙂 See below for the recipe!

Dark Chocolate Rosemary Energy Balls

  • 2 cups oats
  • 2/3 cup peanut butter
  • 1/2 cocoa
  • 1/3 cup agave
  • 1/2 cup ground flax
  • 2 Tbsp coconut oil
  • 1.5 Tbsp rosemary (or as much as you want, depending on how strong you want the rosemary to taste)
  • 1 tsp sea-salt
  • 1/2 cup organic dark chocolate or vegan chocolate chips

Directions: 

Melt peanut butter and coconut oil. In a food processor or a large bowl (you can totally do this by hand), blend all dry ingredients (except chocolate chips).  Add melted peanut butter and coconut oil, as well as agave, to the bowl of dry ingredients.  Once mixture has cooled down, add chocolate chips, and roll into balls. That is literally it. Idiot proof and delicious. 🙂
