I suppose that considering I claim this is a “lifestyle” blog, I should start posting some more “lifestyley” things. SO, I shall begin with these breakfast cookies, which happen to be delish and easy AF to make – my favourite combo.
I like to get up at the crack of dawn and get to the gym before work, so grab-and-go breakfast is right up my alley. While I ‘ll have a larger, more substantial meal post-gym, once I arrive at the office, but I do need a little somethin’ to fuel my body for my sweat sesh. These breakfast “cookies” are packed full of nutrients and are the perfect fuel for my workout. And, with only 7 ingredients, you can whip them up in no time.
(Side-note: they are also pretty idiot-proof… if I can successfully make them, you can for sure.)
5-Minute Breakfast Cookies
- 2 cups oats
- 2 ripe bananas
- 1/4 cup agave syrup
- 1/4 cup chia seeds
- 1 tsp cinnamon
- 1 tsp sea-salt
- Jam of your choice
Pre-heat oven to 375 degrees. In a food processor, blend oats. Don’t over-blend – you want a little texture! In a large bowl, mash bananas, add agave, chia seeds, cinnamon and sea-salt and mix together. Add mixture to food processor and the oat flours, and blend all together. Roll the mixture into medium-sized balls, and push down the centre to create a spot to fill with jam. Add jam, and place on a cookie sheet. Bake for 15 minutes and then eat one right away. This is an important step, as the jam is warm and they will taste extra good. 🙂 Enjoy!
