I’m not going to front – my chef skills are less than practiced. I meal prep on Sunday’s, always, but I am absolutely a creature of habit. I typically make the same things, all the time.
HOWEVER, this is a “lifestyle” blog, and I really want to give you guys a variety of posts, SO I have come to two conclusions:
- I will be testing one new recipe a week, and if it makes the cut, I will share with you.
- I will be featuring some LIT people under “Lifestyle” – food, fitness, fashion, you name it! There is so much to be learned from the knowledge of our peers so why not share that?!
Today though, I have for you the recipe for these DELISH (if I do say so myself) macadamia coconut energy bites, which I concocted this weekend. They are so easy – which is key for me, because I lose interest/patience in cooking quite quickly.
Coconut Macadamia Energy Bites:
1 1/2 cups oats
1 cup raw macadamia nuts
1/2 cup ground flax seed
1/2 cup unsweetened shredded coconut coconut
1/2 cup vanilla protein powder
1/4 cup coconut nectar (or agave, maple syrup or honey)
1/4 cup unsweetened almond/soy/cashew/coconut milk
1/4 cup coconut oil
1 Tbsp vanilla extract
Half of a pack of sugar-free Jello white chocolate pudding mix
Melt coconut oil
Combine coconut oil, coconut nectar (or other syrup of choice) and vanilla
Add all dry ingredients
Add soy/almond/cashew/coconut milk.
Mix together with a spoon and roll into balls. No baking required!
That’s it! I told you – easy as 1,2,3,4,5!
Great for an on the go snack, and sweet enough to satisfy a mid-day sugar craving! Let me know what you think!
